List of Ingredients
- 1 2/3 CUP of all-purpose flour
- 1/4 CUP of milk
- 3 1/3 TBSP. of confectioners' sugar
- 3 1/3 TBSP. of chestnut flour
- 2 TBSP. of unsalted butter, softened
- 1 1/3 TBSP. of apple juice
- 1 1/3 TBSP. of almond flour
- 1 1/3 TBSP. of caster sugar
- 2 1/2 TBSP. of fresh brewer’s yeast
- 2 TSP. of orange blossom water
- 4 of oranges
- 1 of large egg
- mint
- almonds
- salt
Method

Peel 3 oranges and cut them into ¼” thick rounds. Grate and juice ½ orange and set aside. Chop ½ cup almonds roughly.

Mix the milk with the apple juice and orange blossom water.

Mix the 3 flours and sugar; crumble the yeast and add it to the dry ingredients; add the milk-apple juice-orange blossom mixture, the egg and orange zest

Start to mix the dough, add the butter and a pinch of salt. Knead it for at least 5 minutes, then place it in a bowl, cover it and let it rise for 1 hour and 30 minutes.

Roll out the dough into a 10” pan and let rest for 15 minutes.

Preheat the oven to 375 °F.

Prepare the glacé. Mix the powdered sugar with 1 ½ Tbsp. orange juice.

Place the dough in the oven and bake for 15-17 minutes, remove from the oven and brush with the glacé; bake for another 2 minutes.

Remove from the oven, let cool and and garnish with orange rounds, mint leaves and chopped almonds.
