Frittata, the Italian omelet, is always a good idea. Especially since there is never a shortage of eggs in the house. Simply add a little bit of everything in the pantry, and let your imagination run wild! And the prep time? Super short. So it’s perfect for any last-minute meal. Widespread all over the world, the omelet also owes its success to the excellent nutritional value contained within. (That and the low cost for ingredients!)
Our favorite idea? Making a sweet frittata with strawberries and jam, so you can have a dessert or snack with a good low-fat base of protein! But if you have some pasta left over, then you might try making an omelet with spaghetti and green bell peppers... More than a leftover recipe, this one is a real treat. And then again, you could also mix the omelet with feta cheese and squash blossoms, or make an egg white omelet with asparagus. Or perhaps a green omelet with new potatoes; a tasty omelet with fava beans, arugula and pancetta; or even an omelet with wild herbs and rice. Did we mention the artichoke-mint omelet?
