When is meatloaf ever a bad idea? It’s so easy to make – in the pan or in the oven – and it’s so versatile that you can add whatever ingredients you want to the mixture, really. Even with tuna, meatloaf has the potential for an ever-changing flavor mix! You can make it with potatoes; serve it cold without using the oven (perfect for summer); or you can bake it with herbs in the oven! Simple tuna meatloaf
Mix 9 oz well-drained canned tuna with 1 egg and 1 oz parmesan cheese. Add enough breadcrumbs to reach the right consistency with some salt and pepper. Wrap the mixture with baking parchment to give it the classic meatloaf shape and close the ends like a candy wrapper using two strings of kitchen twine. Cook the meatloaf in boiling water for 30 minutes, keeping the meatloaf immersed in enough water to cover it. Use a lid and keep the heat low. Once cooked and cooled, slice and serve!
Baked tuna meatloaf with potatoes
Boil 2 lb potatoes. Let cool and mash. Mix the potatoes with 1 lb tuna in oil, 2 eggs, salt, pepper, chopped parsley and a handful of parmesan cheese. If the mixture is too soft, add some breadcrumbs a little at a time. Then give it the shape of a meatloaf and place it on a sheet of baking parchment. Season with a little oil and bake at 400°F for 20-25 minutes.
Steamed tuna meatloaf
Prepare the same meatloaf with potatoes from the previous recipe, but instead of putting it in the oven, wrap it in baking parchment, closing the ends with kitchen twine like a candy wrapper. Cook in a steamer or in a large pot of boiling water. Cover 3/4 of the meatloaf with water. Once ready, transfer to the oven for a few minutes to finish cooking.
Baked and breaded tuna meatloaf
If you like meatloaf with a little crust, add some breading! Either brush it with beaten egg and then bread it with breadcrumbs, or simply use the breadcrumbs to dust the meatloaf before cooking it. For an extra touch of flavor, prepare a mix of breadcrumbs and chopped fresh herbs such as parsley or marjoram.
Tuna meatloaf tartar
If you don't feel like cooking, and you don't have time to work over a hot stove, you can make tuna meatloaf served cold! Be careful, however – at least the potatoes must be boiled and once cool, mashed and mixed with the tuna. Add chopped capers and parsley to taste. Plus a pinch of salt and pepper with some breadcrumbs to bring the ingredients together. Cover the meatloaf in plastic wrap and let it cool in the fridge. If you give it the shape of a fish, the kids are sure to love it! And for some added flavor? Serve it with a little mayonnaise!
