Classic canapés
The classic canapé is made with lightly buttered rye bread or toasted bread, smoked salmon and a very thin slice of lemon. To vary a little from the basic version, play with citrus fruit – a slice of orange or a slice of mandarin, for example – or replace the lemon with capers or a chopped gherkin. Grated fresh ginger or some thin slices of Tropea onion are also perfect for smoked salmon, especially if you love stronger flavors.
Exotic flavors with salmon
Choose the canapé you prefer (bread, seed crackers, rye crackers...) and spread a roulade made with a slice of smoked salmon and a slice of mango or avocado on top. (In this case, remember to add some lemon juice so it doesn’t blacken.) To pretend you’re on a tropical island.
Salmon and dill or salmon and eggs
Among our favorite smoked salmon appetizers? Canapés with salmon and a mustard-dill mayonnaise. Another unbeatable pairing is the combination with eggs: Soft brioche toasted in a pan and then seasoned with scrambled eggs and strips of smoked salmon – ideal for Christmas lunch, almost giving it the air of a star-spangled brunch.
Canapés to make all diners happy
If you need cheese in the mix, then simply spread fresh goat’s cheese on rye bread canapés, followed by a slice of salmon. Another version we love for dairy-lovers is crumbled feta and smoked salmon on regular toasted bread. If you want a fresh and light taste, make some canapés without bread. Use slices of cucumber as a base with capers and salmon. And, if you like vegetables sauces, leek or artichoke creams go very well with salmon.
