The recipe for the sweet Christmas roll
Ingredients for 12 people
For the cream
12 oz white chocolate
7 oz cream
5 oz Greek yogurt
star anise
cardamom
cinnamon stick

For the roll
6 oz caster sugar
4 oz flour
1 oz cocoa powder
5 eggs
2 yolks
butter
powdered sugar
chocolate chips
cherries in spirits
salt
Method
For the cream
Heat the cream with 2 stars anise, a piece of cinnamon, 4 grains of cardamom and the peel of 1/2 mandarin. Turn the heat off a little before boiling.
Chop the white chocolate, pour the cream, filter it, and stir until a cream is obtained; after a couple of minutes add the yogurt and let the cream rest in the fridge for 10 hours.
For the roll
Line a rectangular plate (30×40 cm) with baking paper; butter and flour the paper.
Mix the flour with the cocoa. Whip 5 egg whites with a pinch of salt, then add 75 g of sugar. Mix with an electric whisk 7 egg yolks with 110 g of caster sugar; add the cocoa flour, sifting it, then incorporate the whipped egg whites, stirring gently.
Spread the mixture obtained in the baking tin creating a uniform layer just under 1 cm thick. Bake at 180 °C for 9-10 minutes.
Remove the baking tray from the oven, turn it upside down with all the mixture on a sheet sprinkled with icing sugar and let it cool.
Stretch out the cocoa rectangle, spread the cream and roll it on the long side with the help of the baking paper. Close the roll by wrapping the ends of the paper like of those of a candy. Cool in the refrigerator for 30 minutes.
Finally, remove the baking paper from around the roll, sprinkle it with icing sugar, decorate with chocolate chips and cherries in alcohol and serve.
