How to make an alternative pesto
First blanch the leaves you’ve chosen for just one minute in boiling water. It is essential that you carry out this step as quickly as possible so that the fibers stay intact. Then drain the leaves and let them cool. Blend immediately after cooling.
Alternatives to the classic ingredients
To blend with the flavor of the green leaves, you can either opt for the classic pine nuts or vary the recipe further with alternatives. For example, to maintain the green color, you can use pistachios, but almonds and cashews are also excellent. The same versatility also applies to the cheese: Depending on the degree of intensity you want to give your winter pesto, opt for a more or less seasoned variety.
